Picky about Pork

Hey Gang!

It has been a while since I have posted something on my blog, I've been so busy with cooking for 2,000 people a day!! Nothing like cooking at Rivas!Anyways, I haven't been able to take pictures yet of our big kitchen, but here is a picture I stole from my friend Joe. This is the kinda food we make here at the YMCA of the Rockies, but only for our special guests haha. I hope you enjoy!

For Mom

So it was Mothers Day yesterday, and Mom was the only one home for the weekend. I decided to go out and buy some groceries and flowers for her lunch (flowers for decoration of course).



My mom LOVES tomatoes, and we had just so happened to get some tomatoes and herbs from the Greensboro Curb Market the day before. Clockwise from the top right: I found some fresh mozzarella in the fridge and decided to coat that in Italian breading and pan fried it, and then served a little bit of the bruschetta mix (tomatoes, garlic, onion, and basil all chopped and tossed in olive oil). Then I made the added the classic bruschetta onto some toasted Italian bread along with a cup of homemade tomato and basil soup. This is only the first part of the meal!


Time for the Main Course! Mom always loves orrechiette pasta and so I decided to make some for her main course! here we have some orrechiette pan tossed with sausage (squeezed out of the skin and chopped) sauteed in butter and garlic, spicy greens, and peeled plum tomatoes. So simple, and so delicious! Happy Mothers Day Mom!

Hey gang! sorry I'm late with these posts, been busy and all with the last days of school and stuff :P

Here's a picture of some of the food I cooked at a little cookout I had the other weekend. Home made jerk Chicken with some marinated beef kabobs. I also took out my griddle and made some hotdog and hamburgers, and threw some bratwursts on the grill after the chicken and kabobs were done. Yay summer cooking!

Vietnamese= Yummy!

This was a very delicious meal for the evening. Binh Minh is an almost secluded restaurant in Greensboro, found way up Market Street past the International Grocery Store. I had sweet and sour chicken with white rice, and my mom, seen in the background putting rice noodles in another bowl, got Chicken Curry. Affordable, filling, and delicious!

Bon Appetit!

I bought some orecchiette the other night and decided to use it tonight! Blanched some cherry tomatoes, cooled and peeled them. Squeezed some italian sausage out of the skin and chopped it up and sauteed it with butter. Added chopped garlic and tomatoes to mixure then served on top of the orecchiette! top it off with some pecorino and bam! easy Italian meal for the night :)

Spicy Comfort at Indian Palace

Indian Palace, located on Tate Street in Greensboro is a great place for affordable Indian food. I was watching an episode of Iron Chef America where they had a mixture of hamburger and Indian food, so I began craving Five Guys burgers and Indian food. I texted my friend and asked her what to get, she replied saying "INDIAN FOOD, DUH!" She picked the right choice for me that night. For dinner I got two delicious meat Samosas, fillled with lamb, potatoes, peas, and spices. Along with that I got some Chicken Tikki Masala with plenty of rice!

Banh Mi? For Me? Yes Please!

Finding Banh Mi Saigon Sandwiches and Bakery, located on High Point Road in Greensboro was like finding a heaven on earth. It looked kinda sketchy at first, but after you walk in the warm smells of bread baking and the sounds of Vietnamese soda cans being opened overwhelm you as you step up to the counter to order. This here piece of heavenly goodness is called the "Number 4." It consists of thinly sliced pickled carrots and daikon, cucumbers, cilantro, jalapenos, pate, and their homemade herb mayonnaise. My meat choice is always the same: Beef. There is also Pork, Meatballs, and tofu. Its always so delicious and filling, and hey! ITS ONLY THREE BUCKS!

First delicious post of the day!

So I recently went to Jack of the Woods, located downtown Asheville North Carolina. The Lamb Burger there was EXCELLENT and I highly recommend it for those who like Lamb. Toppped with delicious blue cheese, spinich, monk mustard, and an onion-herb medley! With a side of Parsnip fries, this meal couldn't have gone wrong :)
